Somehow, when I have picked and hulled and eaten so many strawberries that I have no interest in even one more fresh berry, putting them in a slightly different form makes them new all over again.
Strawberry Popsicles
2 1/2 cups strawberries
Simple syrup (see below)
1/4 cup milk
Splash of lemon juice
Puree strawberries.
Heat 2/3 cup sugar and 2/3 cup water until the sugar dissolves.
Add resulting simple syrup to strawberries.
Stir in milk and lemon juice.
Pour into molds or paper cups with sticks and freeze.
