There is no such thing as too much pesto. Our freezer is stuffed with it, and we’ll be making more as we continue to harvest basil.
A good scape or basil pesto revolutionizes pizza and makes sandwiches something to look forward to, not what you make when you can’t think of anything else.
This recipe makes about a pint, which should be just enough to convince you to make more.
Basil Pesto
3 cups basil
4 cloves garlic
3/4 cup parmesan, grated
1/2 cup olive oil
1/4 cup pine nuts
Combine and puree.
